500 grams plain flour
1 teaspoon baking soda
½ teaspoon salt
100 ml olive oil
200 ml warm water

Place the flour, baking soda, salt and olive oil in a large bowl. Gradually add the water stirring constantly until a soft dough forms. Turn out on to a lightly floured surface and knead until the dough becomes smooth and shiny. Divide into 8 equal pieces, loosely cover with lightly oiled cling film and allow the dough to rest for about 30 minutes.
Preheat a non-stick skillet over high heat. Pleace each dough piece on a well floured surface, flatten and roll out to about 2-3 mm thickness, then take a fork and prick it all over. Place the dough in the centre of the pan and press it down gently. Cook for 2 minutes or until the dough is crisp, then flip and cook on the other side. Repeat with the rest of the dough pieces. Yields 8 piadinas.

    My Grandmother still makes them out of plain flour, water and a tiny bit of baking powder (or baking soda, whichever she has at the moment) and bakes them on one of those wooden stoves :)
    I can't find anything through Google search, so I'll give her a call and pop by your blog to give you the precise recipe :)
