100 grams plain flour
100 grams whole wheat flour
150 ml buttermilk
1 teaspoon baking soda
½ teaspoon salt

Preparation
Sift together the plain flour, whole wheat flour and baking soda twice, put them in a large bowl, add salt and whisk very well. Make a well in the centre, add the buttermilk and mix quickly with a wooden spoon or your fingers to form a soft dough. Depending on how much the flour absorbs, you may need to add a little more flour if the dough seems too sticky. Turn it onto a lightly floured surface and knead very briefly. Form the dough into a round loaf, flatten it slightly and place in on a lightly floured baking sheet. Cut a cross on the top of the loaf and bake it in a preheated oven, at 190˚C (375˚F) for about 20 minutes. Let the bread cool on the wire rack and serve.
