Lush chocolate muffins with a tender crumb, full of crunchy bits of cookies and rum; for when you cannot decide between a chocolate muffin and a chocolate cookie.

180 grams flour
4 levelled tablespoons unsweetened cocoa
2 teaspoons baking powder
150 grams sugar
1 medium egg
100 ml oil
1 tablespoon rum
200 ml boiling water
100 grams Oreo cookies (or chocolate sandwich cookies of your choice)

Pour the boiling water over the cocoa powder, mix well and set it aside to cool down slightly. Whisk up the egg and sugar until creamy, then slowly drizzle in the oil and cooled cocoa batter, as well as rum. Sift the flour with the baking powder, add it to the batter and mix very well. Finally, roughly chop (or crush) the sandwich cookies and fold them in. Divide the batter between 12 muffin liners and bake in a preheated oven, at 180˚C (350˚F), for 15-18 minutes.
