MEATLOAF

Ingredients
500 grams minced beef, lean
1 large yellow onion
3 cloves garlic
1 teaspoon English mustard
2 small eggs
2 tablespoons of tomato paste
1 teaspoon cayenne pepper
1 tablespoon fresh parsley
75 grams breadcrumbs
salt and pepper to taste


Preparation
Finely chop the onion and garlic cloves, and add them to the minced beef, along with the breadcrumbs. In another bowl, mix eggs, mustard, parsley, cayenne and tomato paste, season to taste, then add it to meat and stir well. Grease a baking dish (15x25 cm) well, press in the meatloaf batter lightly, and bake in preheated oven at 170°C for about 60 minutes. Cover the meat with a piece of aluminium foil if it browns too quickly. If you use a smaller baking dish or a loaf tin, the meatloaf needs to be cooked for about 10-15 minutes more, to be thoroughly cooked through. Serve warm with a salad of your choice.
