OLD-FASHIONED HONEY COOKIES

Ingredients
300 grams whole wheat flour
100 grams honey
75 ml oil
75 ml sparkling mineral water
2 tablespoons sugar
1 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon ground cloves


Preparation
Sift the flour with the baking powder and set it aside. Heat up the honey over medium heat, but do not let it boil, remove from heat and quickly stir in the baking soda, constantly whisking until the batter turns white and becomes smooth. Add the sugar, oil and mineral water and whisk well. Add the sifted flour in a few additions, mixing first with a wooden spoon, then with your hands, until you get a soft, pliable dough.
Let the dough rest for 5 minutes at room temperature, then scoop small portions of the dough (rounded tablespoonfuls), shape them into little spheres and arrange them on a cookie sheet lined with baking paper. Bake the cookies in a preheated oven, at 180˚C (350˚F) for 10 to 12 minutes. Let them cool completely and serve. Yields 20 cookies.
