CINNAMON LEMON COOKIES

Ingredients
300 grams flour
150 grams butter
150 grams sugar
2 eggs
1 tablespoon cinnamon
1 tablespoon lemon juice
2 teaspoons cocoa powder
2 teaspoons baking powder
1 teaspoon lemon zest
½ teaspoon ground cloves


Preparation
Sift the flour with the baking powder and ground cloves, and set it aside. Melt the butter (in a double boiler or in the microwave), pour it over the sugar, cinnamon and cocoa powder and beat with an electric mixer until it cools down a bit. Add the eggs, one at a time, beating well after each. To that, add the lemon juice and zest and the dry ingredients, and continue mixing (first with an electric mixer, then with your hands) until you get a pliable cookie dough. Take tablespoons of the dough and arrange the cookies on a cookie sheet lined with parchment paper (and flatten the tops a bit before baking). Bake in a preheated oven, at 180˚C, for 8–10 minutes. Yields 30 medium cookies.
